I had an art mentor who recommended 6 week projects, somewhat to get people out of the mindset that projects began at the start of the month and stopped at the end & they are more manageable than anything longer. Those kind of projects could be milestones to something bigger. She had questions to set project parameters, limitations on skills on which to focus, media, topic, etc. At the end, there was an assessment to think about what went well, whether you met your goal, what adjustments you made to the parameters, and to think about how the next project could get you further on whatever issues or skill shortfalls came up. I really like your practice of adding a rock whenever you finish a stage of a large project. It's more tactile & visible in how it builds up than purchased rewards like a cupcake, new book, or trip to the movies.

To be perfectly honest, I haven't finished enough things to have a finishing ritual! 😅 Something to work on, for sure. I'm about to launch a long-term project and I'll definitely need to have some milestones, breaks, and rewards to keep the momentum going. I love your rocks idea, since it's both tactile and visible!
Finishing a project these days usually just means posting it on the internet. Before I let myself check the analytics, I make sure I’ve firmly started the next one. This probably sounds a little gross and not very romantic, but it turns a series of outputs into a single chain.
